Chocolate, Goji Berry & Seed Energy Bars

We teamed up with SpamellaB to bring you this healthy snack!

“Rich and intense, I thought the orange & cocoa nib variety would pair well with oats, dried fruit, nuts and seeds to create these easy, delicious and natural energy packed snack bars – ideal at any time of day, whether as a breakfast on the go, for those mid-morning or afternoon munchies or before/after the gym. With chunks of chocolate for that sweet tooth, who says snacking has to be boring and tasteless”?!

  • 250g rolled oats – I used Flahavan’s, can be gluten-free
  • 100g mixed seeds (pumpkin, sunflower, linseeds) – I used Good4U Nutrition
  • 50g goji berries – I used Indigo Herbs
  • 50g dried blueberries – I used Active Edge
  • 1 teaspoon ground cinnamon
  • Zest of 1 orange
  • 10 large dates + 150ml water
  • 4 tablespoons maple syrup – I used Indigo Herbs
  • 4 tablespoons smooth almond butter (or other nut butter of choice) – I used Pic’s
  • 50g Montezuma’s Dark Chocolate Absolute Black with Orange & Cocoa Nibs, cut into chunks

Get making!

  1. Preheat the oven to 180 degrees C and grease and line a 9x9in baking tin.
  2. Mix together the oats, seeds, goji berries, dried blueberries, cinnamon and orange zest in a large bowl.
  3. Place the dates in a pan with the water, bring to the boil then simmer for 10 minutes until softened and quite mushy. Add the maple syrup and almond butter towards the end to allow the sticky mixture to combine. Allow to cool a little.
  4. Pour the cooled mixture into the oats and stir well to coat everything in the sticky mixture, then fold in the chocolate.
  5. Tip into your prepared dish and use the back of a spoon to push, making sure it spreads out evenly.
  6. Bake for 15-20 minutes until golden brown. Leave to cool for 10 minutes, then cut into 9-12 bars. Cool completely before removing from the tin – then enjoy!
