Banana Cake with Kew's Raspberry & Cream White Chocolate

Happy World Baking Day! Celebrate by making this delcious Banana Cake with Raspberry & Cream white chocolate, a combination that you need in your life! 

 

Ripe, juicy fresh raspberries, mixed through banana cake mix and combined with chopped @montezumas Raspberry & Cream white chocolate. Baked until skewer comes out clean and serve with warm cream mixed with the chocolate/ice cream/warm with cold cream or however you fancy! 

 

Raspberry & Banana cake 

105g butter 

170g caster sugar

2 eggs

2 medium ripe, roughly chopped bananas

225g SR flour 

1 1/2 tsp baking powder

1 tblsp of vanilla extract 

3 tblsp of milk of choice 

145g fresh raspberries 

Raspberry & Cream white chocolate bar, chopped (keep 6 pieces behind) 

 

Raspberry white chocolate sauce 

60ml of double cream heated in the microwave 

8-10 pieces of the white chocolate buttons

 

METHOD:

Mix the banana cake ingredients (except the raspberries & the chocolate) with a handheld mixer or table top mixer until combined.

Add the raspberries & chocolate and stir through.

Leave the mix for 2 mins and pour into a greased and lined baking tin (20cm x 20cm) 

Bake in the middle of the oven for 40 mins Gas mark 4 until golden and skewer comes out clean. 

Let it cool in the tray for 5 mins and turn out on a wire rack.
 
Let it completely cool before slicing. Heat the sauce ingredients and pour over the slices and serve with your topping of choice!
