Vegan Chocolate Cookie Sandwich

Ingredients -

For Cookies: (8 Cookies / 4 Sandwiches)

For Vegan Buttercream Filling:

  • 140g Powdered Sugar
  • 75g Vegan Butter 
  • ¼ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • Optional: 20g Melted Chocolate

Method -

1. Cream together the margarine and sugar.

2. Mix in the self raising flour.

3. Add the chopped chocolate and mix again.

4. Roll the cookie dough into into 8 balls (you can make them bigger or smaller depending on how chewy you want your cookie).

5. Bake at 180 degrees for 15 minutes - make sure to leave to cool for at least 10 minutes when they come out of the oven so they don’t break apart!

6. Add the powdered sugar, vegan butter, salt and vanilla extract to the bowl of a stand mixer and starting at slow speed, gradually increase speed until thick and smooth.

7. If your consistency is too thick, add a little non-dairy milk a drop at a time, and if it’s too thin, add ¼ to ½ cup more powdered sugar.

8. Spread onto the cooled cookies & sandwich your cookies together.

9. Enjoy with a delicious cup of tea!
